An investment in know-how is an investment in the future. Our employees were convinced of this by participating in the BreadTech internal training program, organized by Lantmännen Unibake in the field of fresh bread business, of which Vilniaus Duona is a part. During the program, bakery managers, product development specialists, technologists from different companies in Finland and the Baltic States had the opportunity to improve their baking skills and deepen their practical knowledge, as well as share their experience in bread product development and baking.

"We have many qualified and talented employees with different experiences in different parts of the bread production value chain. But we don't always speak the same language or have a unanimous opinion and understanding about the process of baking bread products. This program has helped the employees working in our bakeries to unify their knowledge of baking technology, product development and to better understand each other by evaluating different working methods," says Nils-Aslak Antinkaapo, owner of the BreadTech training program, Head of Technology.

"I have been working in production for quite a long time. I was sure that I knew everything about the technology of baking bread, the processes taking place during production, and the qualitative nuances of products. But during this training program, I realized how much I still don't know, how product production technologies, raw materials, equipment have changed, what has the greatest impact on the quality and freshness of products. I am really glad that I had the opportunity to participate in this training, not only myself, but also other members of the production team. After the training, we have already applied some of the knowledge and advice received from bread technology guru Nils-Aslak Antinkaapo in the technological process of production, equipment settings, and qualitative evaluation of products," said Dalia Zdanovičienė, the head of Vilnius Bread Vilnius Bakery.

"We are all in the same bread business, we are all united by a common desire, understanding and professional curiosity, but it is always fun to talk to professionals in the same language – that was the goal of the training. Each teaching opens up a wider world and a deeper understanding of bread. During such trainings, you understand how many opportunities there are for technologists, equipment manufacturers and scientists in the development of processes, equipment and raw materials. Once again, I was convinced of how much depends on people, their abilities, perception of processes and comprehensive vision," Snieguole Soblinskienė, Head of Product Development for the Baltic States, shared her feedback on the training program.

We believe in the benefits of sharing experience and learning from others, after all, we are part of a large organization where many bread baking professionals work. To maintain a strong position in the market and remain competitive in the future, we need to improve our knowledge. Knowledge is becoming increasingly important – we need to act more efficiently, better and faster to meet the needs of our users.
